David and I are on vacation right now in Missouri and we're having a pretty good time. We definitely both needed this break and even though we're still doing work while we're away, it's still a good time for our minds to rest a little bit and reconnect with one another. We're out here for a whole week and to save on money, we are staying at a place that has a kitchen so we can make our own food. The kitchen is missing an oven, but you know that won't stop me from anything (except baking a cake or something...). This morning, I made us potato latkes and fried eggs with some strawberries on the side. It was delicious and sooo easy. I used this recipe as a guide for my latkes. However, I did not have any onion on hand (dang it!) and I used a bag of hashbrowns since I also don't have a food processor or grater with us. They turned out pretty dang yummy!

This is like my boyfriend's favorite breakfast. He always wants some variation of eggs and potatoes. Looks super yum! We're having a mini vacation in a couple of weeks and also booked a place with a kitchen. I'm all about saving money these days, plus it's fun too! I hope you're enjoying yourselves so far!

I love potato latkes! I've never thought to use a bag of hashbrowns, but that is genius! I will keep that little trick in mind for our next family vacation.

It looks delicious! But I do find some things on your blog a little curious... do you eat strawberries with them?! I am still astounded by the whole pancake + bacon thing that America has going... I'm not quite used to the sweet and savoury mixup.
