One thing I really love doing is making lunches. Yep, I'm not even joking a little bit. I love finding something yummy for David and I's lunches. In fact, if I could, I would pack lunches for everyone! That's how much I love it! Is there any profession out there that just packs people their lunches? If not, I may just have to make one because I woud do it! Anyway, I thought I'd share some of my lunches that I have on a daily basis. What I do is pack a snack or two and then something that I have for my "main meal". If you're suuuuper interested, my eating schedule is: 8:00am, breakfast; 12:00pm, snack; 2:30pm, lunch; 5:00 or 6:00pm, snack; between 7:00pm and 9:00pm, dinner. Here are some yummy lunches I've had recently!
Leftover red pepper pasta, grapes, nutrigrain bar, water.
Tuesdays I'm home around lunch time because I have class, so I made myself some fried eggs with half of a buttermilk waffle acting as toast. I had popcorn and grapes as my snacks.
An awesome chicken burger David made with a brioche burger bun, kettle popcorn, and applesauce.
Spaghetti with marinara sauce, two hard-boiled eggs, and some applesauce.

Mmm - these look delicious! I love to cook but I hate leftovers, so I have a hard time with lunches that are anything more than a couple of crappy snacks.

Sam, leftovers are a tricky thing! You either love them or you hate them! Personally, I love them so a lot of my lunches are made up of meals I've already had for dinner. If you ever do want to try your hand at leftovers again, I will say that my favorites are pasta. If you're able to, reheat them in a pan with a little bit of olive oil instead of the microwave because the microwaves tend to dry them out a bit. I'm glad you were inspired though!!

Thanks, Tara! I'm a very time-constrained person as well (actually, is anyone not? Because if so, I definitely want their job!) so I try to make my lunch the night before so in the morning I can just grab and go.

This is a good idea! I'm the same, love packing lunches for Jackson and I even do little containers of almonds and muesli bars, or dips with veggies but seriously it saves SO MUCH MONEY. SO MUCH, I hardly eat lunch out when I'm t work anymore. Great post! Keep doing it :)

Thanks, Rebecca! And yea, it really does save a lot of money, but it also keeps us on track with eating pretty healthy. I love cut up veggies too!

Emma, perfect! I hope you find some lunches that you like! I personally can't stand eating sandwiches anymore, so I love a good lunch that I can reheat in the microwave.
