For Christmas, Santa gave me a cool new waffle iron! Oh, so awesome! I can't wait to make so many different variations of waffles like cinnamon, pumpkin, and even gingerbread! But I decided to start off with some buttermilk waffles. They were so yummy and filling! We had them with chocolate chips, but these will be amazing with some fresh strawberries and homemade whipped cream (next weeks breakfast, maybe?). Unexpectadly, they were extremely filling. I could only it one and a few bites of Joey's that he didn't finish. That was a very nice surprise. I imagine that with fruit, I could ony eat one whole one. I can't wait to make some more variations of waffles and to try out my other cool new cooking toys I recieved for Christmas.
to make buttermilk waffles:
2 cups all-purpose flour
1/2 teaspoon salt
2 tablespoons sugar
1 1/2 teaspoons baking soda
1 3/4 cups buttermilk*
2 egg yolks
4 tablespoons (1/2 stick butter, melted and cooled)
1/2 teaspoon vanilla extract
Stir together the flour, salt, sugar, and baking soda. In a seperate bowl, whisk together the buttermilk, egg yolks, butter, and vanilla extract.
Spray the waffle iron with cooking spray or brush it with neutral oil (like canola oil) and then preheat. When the iron is heated up, whisk the dry and wet ingredients together, then pour about a third cup in the center of iron. The waffle is done cooking in about 5 minutes, or until the steam stops or slows from the iron. Take the waffle off the iron using a fork or butterknife.
Slather with butter while hot and enjoy with fruit and syrup or powdered sugar and chocolate chips!
