David and I aren't necessarily bad eaters (we don't eat fast food, we rarely eat out, and we're usually aware of what we're putting in our bodies), however, I can say that we need to add more fruits and veggies into our diets. Along we that, we need to start making our own snacks that we can eat thorughout the day instead of depending on processed foods. We've also fallen off the wagon when it comes to planning our meals and instead we're left scrambling almost every night going to the grocery store and finding something easy and quick for dinner (not always the healthiest). Here are a few healthy recipes I'd like to try out. This one above is a kale and potato salad. I'm not the biggest kale fan, but I could probably dig it with some roasted potatoes mixed in. mmm!
These parmesean and garlic zucchini chips look soooo yummy! They will be a great weekend or take-to-work snack. I bet they'd taste really good dipped in a marinara sauce as well.
No Bake Energy Balls! Not only are they funny to say (energy balls..hehe..yea, I still think that's funny and I also say a lot of "That's What She Said" jokes, okay?) but they look really good. I have super early mornig classes so these would be perfect to take with me when I don't have time to sit down to eat.
One pot vegan pasta! Not only is that an easy clean up, but it's such a simple recipe. I've never cooked with eggplant before (and I've only eaten it once), but I'd love to try it in this recipe. Plus, David and I are BIG mushroom fans over here.
We have to keep a healthy fridge too. I love how organized and easy to navigate this fridge is. I definitely need to get me some of those bins (and juice boxes).
